Chicken con Queso

Chicken con Queso using Williams Seasonings. It’s the simple things that smack the hardest!


INGREDIENTS:

  • 1.5 – 2 lbs boneless skinless chicken thighs

  • 1 package Williams Taco Seasoning

  • 1 cup chicken broth

  • 1 small can chopped green chiles

  • 1 cup shredded monterey jack cheese

  • 1 cup chunky salsa

  • ¼ cup sour cream

  • ¼ cup chopped cilantro

  • Chips for serving


RECIPE:

  1. Season your chicken thighs with 1/2 package of the taco seasoning. Place the thighs in a baking dish and then put them onto your smoker at 275 degrees.

  2. After 1 hour, pour chicken broth over chicken and add rest of taco seasoning. Cover the baking dish with foil and let the thighs continue to cook for an hour.

  3. Shred the chicken thighs in your baking dish and mix it into the juices. Add in sour cream, salsa, shredded cheese, diced chilis and cilantro. Stir to combine.

  4. Place the chicken and cheese mixture back on your smoker at 300 degrees and cook 30-40 minutes until it’s hot and the cheese is bubbly. Serve with tortilla chips!
