These Shredded Beef Taquitos are flavor train, bang bang flavor gang delicious! And, it's an easy way to use left over meat from last weekend's BBQ.
INGREDIENTS:
2 cups leftover shredded beef (leftover pork and chicken work too)
Corn tortillas
4-6 cups vegetable/canola/peanut oil
2 cups fresh shredded cheddar
1 avocado
1 bunch cilantro
6 cloves roasted garlic
2 roasted tomatillos
¼ cup water
2 tbsp chicken boullion
RECIPE:
Make avocado salsa by combining 1 avocado, 1 bunch cilantro, 6 cloves roasted garlic, 2 roasted tomatillos ¼ cup water and 2 tbsp chicken bouillion in a food processor or blender. Process until smooth.
Microwave your tortillas to make them more pliable. You can also use a stovetop… just don’t overcook them.
Place 1 tbsp shredded cheese on the edge of the tortilla closes to you (try to stay away from the edges). Place 2 tbsp meat on top of the cheese and roll tightly away from you. You can secure the taquitos with a toothpick if needed.
Preheat oil in cast iron skillet or deep fryer to 375 degrees Fahrenheit. Cook taquitos in batches being careful not to overcrowd fryer. Cook 3-5 minutes until golden brown. Serve immediately with avocado salsa.
