This Shrimp Po Boy recipe is fully loaded, flavor packed and potent!
INGREDIENTS:
1 pound raw red shrimp
1 package Cajun Two Step seafood breading (can sub with 1.5 cups flour and ¼ cup seasoning of your choice)
2 lbs raw medium shrimp (about 45), peeled, deveined and tail off
6 cups Peanut or veggie oil
½ cup mayonnaise
3 tbsp minced red onion
2 tbsp minced dill pickle
2 tbsp fresh lemon juice
2 tbsp chopped capers
¼ cup HNY FYR BBQ sauce
1 toasted French roll or hoagie bun
Sliced tomatoes
Shredded iceberg lettuce
1 tbsp mayo
RECIPE:
For the Fried Shrimp
Combine ½ cup mayo, 2 tbsp minced red onion, 2 tbsp minced dill pickle, 2 tbsp fresh lemon juice, 2 tbsp chopped capers and ¼ cup HNY FYR sauce. Stir to combine and set aside.
Pour one package of cajun two step seafood breading into a bowl or tupperware. Pat the shrimp dry then place into the breading mixture. Make sure each shrimp is properly coated.
Fill a deep fryer or frying skillet with oil. Working in batches, fry the shrimp for about minutes or until golden brown. Transfer cooked shrimp to a wire rack or plate lined with a paper towel to drain.
Working in batches, fry shrimp until golden brown about 3-4 minutes per batch. Transfer to paper towels to drain.
Assemble the Sandwich
Assemble your sandwich on your toasted hoagie or French roll. Slather the bottom of the roll with mayo, lettuce and then sliced tomato. Place the shrimp on the tomatoes, top them with sliced pickles (optional) and then cover the sandwich in our remoulade. Enjoy!
