Crispy fried chicken thighs with a tangy, sweet, and spicy sriracha glaze make this Sweet Sriracha Fried Chicken Sandwich delicious!
INGREDIENTS:
2 boneless skinless chicken thighs
1.5 cups buttermilk
3 tablespoons fish sauce
Chicken rub of your choice
1.5 cups flour
1 tbsp salt
1 tbsp black pepper
1 cup Chickadees sweet sriracha (Or mix equal parts sriracha with sweet chili sauce)
½ package coleslaw mix
¼ cup thin sliced green onion
¼ cup cilantro
¼ cup mayo
3 tablespoons rice vinegar
1 tablespoon sesame
Juice from one juicy lime
salt and pepper to taste
Brioche buns
4 cups peanut oil or preferred frying oil
RECIPE:
Combine buttermilk and fish sauce in a mixing bowl. Season heavily with whatever chicken rub you like. This will provide the primary seasoning for the chicken so make sure it’s seasoned well. Marinade your chicken thighs for 2-4 hours.
While chicken marinades, prep slaw. Combine a ½ package of coleslaw mix with ¼ cup thin sliced green onion, ¼ cup cilantro, ¼ cup mayo, 3 tbsp rice vinegar, 1 tbsp sesame oil, juice from one lime and salt and pepper to taste. Mix to combine and keep cool until use. Preheat oil to 350 degrees.
Place flour in a small tray and season with a salt and pepper. Remove thighs from marinade and press both sides firmly in to flour mixture. Repeat and dip in buttermilk marinade and then into flour again.
Carefully drop coated thighs in to oil. Fry 6-8 minutes until crispy and they reach 165 internal. Remove from fryer and place in a bowl. Toss with sweet sriracha sauce. Serve on toasted brioche with some slaw and more sweet sriracha sauce.
